Ingredients
2 – 184 grams | Century Tuna Flakes in Oil, drain and reserve oil and liquid |
1.4 cup | sukang puti (white palm vinegar) |
2 tablespoons | soy sauce |
1/4 cup | sliced garlic |
1 teaspoon | cracked peppercorns |
1 leaf | laurel (bay leaf) |
1 – 200ml | Coco Mama Fresh Gata |
Plating and Garnish: | Crispy garlic, steamed rice, salted eggs, tomatoes |
Procedure
In a bowl, combine Century Tuna Flakes, vinegar, soy sauce, half of garlic, pepper corns and bay leaf.
Allow to marinate for atleast 5 minutes to brown remaining garlic
Add tuna flakes with its marinade, the remaining liquid from tuna and coco mama fresh gata.
Cover and simmer for about 10 minutes or until sauce has a smooth and slightly thick consistency.
Serve hot, topped with crispy garlic.
Best paired with steamed rice, salted duck eggs and tomatoes.
Makes 3 to 4 servings
Delightful tip: Atsuete or annatto oil can add a more appetizing flavor and color to the dish. you can drizzle it into the sauce as it simmers.
