Coco Mama Ginataang Kalabasa Soup

Ingredients

1 – 400mlCoco Mama Fresh Gata
2 tablespoonscooking oil
1/4 cupchopped onion
2 teaspoonschopped garlic
1/4 cupchopped celery stalks
1 kilo kalabasa – peeled, deseeded and sliced
1 smallcarrot, peeled and chopped
2 tablespoonsall-purpose flour
3 cupschicken broth
1 teaspoonsalt
1/8 teaspoonwhite pepper
chopped sitaw, blanched – optional
fried bacon bits – optional

Procedure

Heat cooking oil in a large pot. Saute onion, garlic and celery until soft and aromatic

Stir in kalabasa, carrot and flour. Cover and cook over low heat for about 3 to 5 minutes.

Pour in chicken broth and Coco mama Fresh Gata then cook for another 10 minutes until kalabasa and carrots are tender. Season with salt and pepper. Remove from heat then cool for about 5 minutes.

Pour soup in a blender or food processor and puree until smooth. pour into bowls and top with sitaw and bacon bits.

Serves 5 to 6

Delightful Tip: Without a food processor, you can puree cooked kalabasa and carrot by mashing and pressing them through a fine strainer.
