Argentina Corned Beef Embutido

Ingredients

1 kiloground pork
1 – 260 gramsArgentina Corned Beef
1/2 teaspoonsalt
1/8 teaspoonpepper
2 tablespoonsall-purpose flour
1/4 cuppickle relish
1/2 cupcarrots, diced
1/4 cupraisins
1/4 cupred bell pepper, diced
2eggs, beaten
2 eggs, hard boiled and sliced to wedges
1 – 260 gramsArgentina Vienna Sausage

Procedure

In a large bowl, combine the first 10 ingredients from ground pork, Argentina Corned Beef to beaten eggs. Mix until well-blended. Divide mixture into flour

Lay a sheet of aluminium foil (about 10×10 – inches), on a clean surface then brush with cooking oil. Add 1/4 of mixture and spread with a spatula or the back of a spoon.

Arrange the slices of eggs and 2 pieces Argentina Vienna Sausage over pork mixture. Roll up and wrap tightly with the foil. Repeat to make 3 more embutido loaves

Steam for 45 minutes then leave to cool for a few minutes. Refrigerate overnight as it is best to chill embutido completely before slicing. May be served cold or fry and slice before serving.

Makes 4 embutidos.
