
Ingredients
| 1 tablespoon | cooking oil |
| 2 tablespoons | chopped onion |
| 1 teaspoon | minced garlic |
| 2 – 175 grams | Argentina Corned Beef |
| 1/4 teaspoon | salt |
| 1/8 teaspoon | ground black pepper |
| 4 cups | mashed potatoes |
| 1/2 cup | all-purpose flour |
| 2 | eggs – lightly beaten |
| 2 cups | breadcrumbs |
| cooking oil for deep frying |
Procedure
Heat coking oil in a pan. Add onion, garlic and Argentina Corned Beef to sauté until aromatic. Season with salt and pepper according to taste. Set aside to cool.
Scoop a heaping tablespoon of mashed potatoes into hand. Lightly press the center to make an indentation where you can add a teaspoon of corned beef filling. Cover with another tablespoon of mashed potatoes, and then careully shape into a croqueta.
Dredge each piece in flour, dip in egg then roll in bread crumbs. Deep fry in hot oil until golden.
Makes 16 to 18 pieces.
Delightful tip: Aioli is a popular dipping sauce for croquetas. You can prepare it by mixing together some mayonnaise, grated garlic, lemon juice, salt and pepper.
